Summary

The olive oil mills in the region of Chania are an important part of the local economy and produce high-quality olive oil. This area benefits from favorable climatic conditions and geographical characteristics that contribute to the development of olive oil mills. Local producers demonstrate exceptional professional craftsmanship and take care to preserve the tradition and quality of the product. The waste generated by the olive oil mills poses an environmental challenge, as it contains olive residue and chemical products. However, they can implement a circular economy through various technological and procedural measures. Examples include recycling the residues to produce organic fertilizers or using them as an energy source through biomass. Implementing a circular economy in olive oil mills can reduce the environmental footprint and promote the sector's sustainability.The purpose of this thesis is to analyze the flow of materials and information of selected olive oil processing businesses in the region of Chania using social network analysis within the framework of industrial symbiosis and circular economy. Subsequently, the specific characteristics, external factors, strengths, and weaknesses of each type of business were studied. Based on this analysis, strategic planning was attempted to achieve maximum industrial symbiosis, and the conditions for transitioning to a more circular production operation were identified. In more detail, it was determined that the most suitable business model for maximizing the degree of industrial symbiosis involves the presence of a coordinator, which can be either a private company or a public entity. In this specific case, the coordinator oversees the waste streams as well as their production processes. In this way, the olive mills simply provide their waste to an external entity responsible for the management of the waste.
