Περίληψη

The kitchen as we know it today is an integral part of modern life, usually an open space where the family naturally gathers around. Modern kitchens are designed with plenty of room for food preparation, cooking, consuming and hospitality. Considering how important the kitchen is for modern households, it is surprising to note that up to the recent past, it was one of the least desirable rooms at home. It is obvious that the kitchen has occasionally received technologicaland social interventions. The cooking proccess and the dinning that has evolved into modern cuisine - has been influenced over time by various factors such as climate, available materials, household needs, and social standards. What may not be so obvious is the causes that caused these changes.In the present research study, the evolutionary course of the kitchen is investigated and recorded over the centuries, from the original structure of the fireplace to the contemporary design of the "built-in" form, conquering a dominant position in the home and playing a leading role in everyday life.An effort is also made to highlight and approach the changes in kitchen architecture, what were the causes and reasons that caused these changes, along with the crucial intervention stations that led to the modern form, focusing mainly on the area of the western world.Beginning journey in time, from the prehistoric age of the first human settlement, we go into the civilization of Antiquity, we are quickly passing through the Middle Ages architecture, then crossing the New Age from the Renaissance to the Victorian period, crucial in the evolution of the kitchen, mediated by the Industrial Revolution, in order to arrive at the Modern Age of the Western World and the changes brought about by the 20th mainly and the 21st Century.Through this journey, we once again see the anthropocentric character of an architecture that interacts with the human factor over time.
