Summary

Due to the competitiveness the importance of reducing cost and the growing sensitivity to environmental factors in the hotel design, is leading to the introduction of environmental friendly elements; if will be added the considerable increase in the cost of fossil fuel, it is obvious that all these factors create conditions favorable to the optimization of energy resources.In this paper are presented the results of audits, in the form of specific energy indicators, in 10 hotels in Greece grouped to various star categories and hotel typologies (Mount, City and Coastal type). Furthermore, in this paper is applied a basic model of the energy flow through the hotel interface starting from the various fuel input, through eight cost centers and finally down to five end-use services. The basic model is based on the energy mix matrix, which relates the cost centers (facilities) to the final services. As an example of result, a specific energy consumption of 5.5 kWh/lunch is found in a deluxe Greek hotel.
